This dish is the epitomy of Italian street food and something you are sure to find over the counters of bars all over Italy when "Aperitivo" time clocks in. The toppings can vary and you are "allowed" to use whatever takes your fancy. Why not try mint and mashed peas with feta? or perhaps chicken pate' and sauteed mushrooms? However, the base is always the same and here we will give you the heads up on how to make the most classic Bruschetta with Basil and Tomatoes




1 loaf of Ciabatta bread or crusty bread (french stick from the supermarket will do too)

1/2 cup of Matakana Extra Virgin Olive Oil

3 Chopped acid free tomatoes or bell tomatoes or my favourites beefsteak tomatoes

5 Garlic cloves chopped finely or mashed

a bunch of basil leaves

Salt and cracked pepper to taste


Turn Grill function on your oven on (or barbacue)

Cut your Ciabatta bread into thick slices. Drizzle abundant Matakana Extra Virgin Olive Oil over each slice and spread the garlic paste (or chopped) over it.

Grill till crispy turning around once.

In th meanwhile mix in a bowl chopped tomatoes with roughly chopped basil leaves, a chopped garlic clove, a drizzle of olive oil and salt and cracked pepper to taste

Once toast is ready cover with chopped tomatoes mix and serve immediately.
